First of all he has destructive death: compass needle which allows akaza to detect his opponent's based on fighting spirit no matter where they are, it also allows him to always locate their vitals and strike their weaknesses while also striking and guarding from his own making himself incapable of having openings. He adapts to any human opponent's fighting style over time and counter attacks with the utmost precision.
Meaning sanemi has no way to win especially since his fighting spirit is one of the highest if not the highest considering he has shown he has the most animosity towards demons(stabbing nezuko, almost blinding genya) and he likes to fight the most out of the hashira.
Regarding sanemi's blood alot of people think his blood is the deciding factor of the battle however I'd say his compass needle is a direct counter to his blood's effect because the compass also controls akaza's body so while his physical body is dizzy his fist and legs will be pulled towards sanemi's vitals and will 9/10's still hit because of the technique. Sanemi's blood doesn't weaken the techniques themselves or affect them in any way.
Akaza is way more experienced and proficient in hand to hand combat, has more strength, higher battle iq, and regular iq, too. He was able to handle giyu and tanjiro both with minimal effort and kept the advantage in their short 1v1 battles.
Wind breathing has little defensive attacks, so that's another point against him he has no way to defend against akaza's big AP techniques like annihilation type or final form: blue silver chaotic afterglow
Sanemi's pure speed has never demonstrated he's faster than akaza. Sanemi is relative to giyu post training arc and I believed giyu surpassed sanemi when he got his mark but once sanemi got his it evened them out again.akaza quickly adapted to and matched marked giyu's increased speed and it's safe to say giyu's and sanemi's marked speed is more or less the same.
Sanemi's reaction speed is only relative to suppressed not trying base kokushibo(same one that no diffed marked mui) and even then he was handled with easy-mid difficulty and because once kokushibo tried harder sanemi got blitzed via moon breathing 6th form. Marked sanemi is relative to trying but suppressed kokushibo because once kokushibo switched to long sword he was falling back and struggling to react losing 2 fingers minimum thanks to gyomei's save and suffering several cuts that caused him to fall before being saved by muichiro.
Where akaza scales to kokushibo is unknown, but he likely did better than sanemi simply because he's a demon. He fought kokushibo before and showed impressive enough spirit to be spared. In conclusion, Akaza wins mid difficulty like with giyu. His only weakness is the selfless state, which sanemi does not have.
